Among several other amazing benefits, the banana flower contains antioxidants that battle free radicals and prevent them from damaging the body. Place in a bowl filled with 2 litres water, lemon juice and 1 tbsp salt, to prevent browning. Halve banana blossom cores, slice on the diagonal and add to acidulated water. Drain banana blossoms and place in a bowl. Add spring onions, coconut, coriander and dressing, and toss gently to combine. Bon appetit! #molokoit

Root Fries with Gremolata
Makes 4 to 6 servings

2 lbs of root veggies in whatever combination you like: potatoes, sweet potatoes, carrots, yams, rutabagas, parsnips
4 tbsp olive oil
2 tbsp chopped fresh sage leaves
2 tbsp finely chopped fresh parsley
2 garlic cloves, minced
1 tsp finely grated lemon zest

1. Preheat oven to 400. Peel the vegetables and cut into 3 inch batons that are between 1/2 and 3/4 thick.
2. Place in a bowl and add olive oil; toss until evenly coated. Season with sage and salt. Transfer to a large roasting pan.
3. Roast for 20 minutes, stir well, and then continue roasting until crispy on the outside and tender inside, and 40 min total. Toss with parsley, garlic and lemon zest.

I picked up this beautiful blue striped bowtie pasta at the Kula Marketplace on our way up to Haleakala. It tasted FANTASTIC. Really had that "wow" factor going! Yes, this dish was a hit, a total crowd pleaser. 

Lemon Sage Artichoke Pasta

prepare pasta as directed
Toss in artichoke olive oil, lemon juice, lemon zest, salt, pepper & parmesan to liking. Garnish with fresh sage, mint, lavender, basil or whatever favorite herb you have on hand.

Greek Yogurt
Pistachios or whatever nuts your fancy
Vanilla Granola
Honey drizzle
Fruit of choice

Green Juice
Makes 1 - 2 servings

3 organic apples
1 stalk celery
1 cup spinach leaves or kale
1 inch piece fresh ginger
1/2 fennel bulb
1/2 cup parsley
1/2 cucumber

Add ins:
1 tsp flax seed oil
About 6 nuts (I prefer macadamias)

Pass the apples, celery, spinach, ginger, fennel, parsley and cucumber through a juicer. Place mixture in blender. Add the remaining ingredients. Blend, take care to leave the nuts chunky so that you can chew them.

Serve immediately.

1 large ripe banana, peeled and sliced
1 cup mango, frozen
1 cup pineapple, fresh 
1/3 cup coconut milk
Sprinkle of raw sugar to taste
1 1/3 cup of pure water
5 large ice cubes
First, pour water and coconut milk into the blender. Second, place the banana, pineapple, and sugar on the bottom with the frozen fruit and ice on top. Blend on low for 10-20 seconds. Then increase the speed to medium/high until creamy smooth. 
Man-Go in Black
1 large ripe banana, peeled and sliced
1 ½ cups mango, frozen
¾ cup blackberries, frozen
Sprinkle of raw sugar to taste
1 1/3 cup of pure water
5 ice cubes
First, pour water into the blender. Second, place the banana and sugar on the bottom with the frozen fruit and ice on top. Blend on low for 10-20 seconds. Then increase the speed to medium/high until creamy smooth. 
The Mango Blues
1 large ripe banana, peeled and sliced
1 ½ cups mango, frozen
2/3 cup blueberries, frozen
Sprinkle of raw sugar to taste
1 1/3 cup of pure water
5 ice cubes
First, pour water into the blender. Second, place the banana and sugar on the bottom with the frozen fruit and ice on top. Blend on low for 10-20 seconds. Then increase the speed to medium/high until creamy smooth. 
Tropical Summer Chill
Flesh of 1 mango, fresh
1 cup watermelon
¾ cup blueberries, frozen
1 cup 100% pineapple juice
8 ice cubes
First, pour juice into the blender. Second, place the mango and watermelon on the bottom with the frozen berries and ice on top. Blend on low for 10-20 seconds. Then increase the speed to medium/high until creamy smooth. 
Kiwi Strawberry Smoothie
1 cup strawberries, fresh
3 kiwis, fresh and peeled
½ cup of mangoes, frozen
Sprinkle of raw sugar to taste
¾ cup of pure water
3-6 ice cubes
First, pour water into the blender. Second, place the fresh fruit on the bottom with the frozen fruit, ice, and sugar on top. Blend on low for 10-20 seconds. Then increase the speed to medium/high until creamy smooth. Serves 1-2

I call this my Survival Smoothie. It has everything you need to ... survive! Ha ha ha ha! :)
